My daughter is three years old and sometimes I struggle finding something to cook for her as she is one fussy eater who doesn’t want to eat meat of any sorts.
She is a fan of peas and sweet corn and she could live happily on both. This way I found the easiest, quickest recipe for her.
Add two spoonfuls of couscous in a bowl, add four parts (spoonfuls) of boiled water over it and cover with cling film for five minutes.
In the meantime, boil some frozen peas or get some sweet corn ready (depending on how big of a portion you would like to make). Add the peas or sweet corn (you can do both if you want) into the couscous bowl and mix (I do use a tiny bit of salted butter)
I cut her tiny bits of cheddar cheese and leave it on the side.
This is one of my daughter’s favourites and it only takes you less than ten minutes to make. I hope it will work for you just as well as it does for me.

As a plus, couscous is easy to make and you can add as many veggies, cheese and chicken as you would like. For myself I make it with feta cheese, green olives, avocado and grilled chicken.
This is a great recipe, thanks for sharing! My three year old is also a picky eater who doesn’t like much meat. And just about the only veggies I can get him to eat is corn and peas, so I will definitely try this!
